your modern eats: sugar smack pie

A while back we were invited to a dinner party that our friends Steve and Lauren’s were hosting and we were required to bring a dessert. I wanted to tackle something new so I found a recipe for a Chocolate Hazelnut Terrine and put my own little spin on it.

You will need:

1 cup crushed oreos (remove frosting before crushing)

1 tbsp sugar (for crust)

3 tbsp butter, melted

8oz package cream cheese

1/2 cup Nutella

1/4 cup sugar (for filling)

12oz container frozen whipped topping

1 cup semisweet Ghirardelli chocolate chips, melted

1/2 cup roasted hazlenuts

10in loaf pan (I used a 10in round pan)

aluminum foil

Step 1:

Line your pan with aluminum foil, fully covering the bottom and walls for easy removal.

Step 2 (layer one):

In a small bowl, combine oreo crumbs and sugar. Add melted butter, stirring until combined. Press into bottom of prepared pan.

Step 3 (layer two):

In a medium bowl, beat cream cheese, Nutella, and sugar at medium speed with a mixer until smooth. Fold in 3 cups of the whipped topping. Reserve 1 cup of this cream cheese mixture in a small bowl. Spread half of the remaining cream cheese mixture over the chocolate crust.

Step 4 (layer three):

Add melted chocolate to the reserved 1 cup cream cheese mixture, stirring until smooth. Spread evenly over cream cheese layer in pan.

Step 5 (layer four):

Sprinkle evenly with roasted hazelnuts. We couldn’t find any at the store so we roasted our own raw hazelnuts.

Step 6 (layer five):

Cover hazelnut layer with remaining cream cheese mixture.

Step 6 (layer six):

Spread remaining whipped topping evenly over the cream cheese layer.

Step 7:

Cover and freeze for at least 4 hours.

Step 8:

When you’re ready to serve, simply lift the foil out of the pan and peel away to expose all of the layers. Then garnish the top with hazelnuts and serve.

It didn’t turn out as perfect as the picture in the magazine, but then again does it ever? It was a big hit at the party and no one could figure out why it tasted so familiar and then it hit us, Sugar Smacks!! Remember Sugar Smacks?

Therefore we changed the name to Sugar Smack Pie. :) It’s a great cold dessert to beat the heat.
